Caramel Peanut Popcorn

Caramel Popcorn?....oh, but not really....peanut butter and honey popcorn!  This treat will not disappoint!  


Put about 1/4 cup coconut oil in a thick bottomed pan.  I use my pressure cooker that has a long handle


 Add to hot oil, 1/2 cup popcorn kernels.


 Attentively wait....don't get impatient...they will pop!
 Put the lid on...or they will escape!
SHAKE-a-SHAKE-a-SHAKE
 Have your bowls ready.
Pour your popcorn into bowls and be careful to remove any unpopped kernels.  You don't want your sweetness to be the cause of a broken tooth!


Warm  slightly to combine:
1 cup honey
1 cup peanut butter
1 tsp salt



Pour over popcorn.









 You better get all that goodness out of that pan...the popcorn will thank ya!
 Yea, it gets a bit messy....but really worth it!
 You will have to get it on your hands....toss to coat all the corn.
 Once that task is complete.  Pour out on lined (parchment paper or silpat) baking sheets.
Bake @ 350 for 10 minutes or till crisp.  Don't let it burn....you will have the whole family crying.


 Allow to cool...and enjoy this oh, so delicious and HEALTHY treat!
Just remember.....everything in moderation....if you can!



 Store in an airtight container.
