Guiltless Peanut Butter Cups

Peanut Butter Cups



 peanut butter filling:

3/4 cup natural peanut 
butter
1/4 cup coconut oil
2 tablespoons raw 
honey
warm slightly and combine ingredients




chocolate bottom and top
4 tablespoons coconut oil
4 tablespoons butter
4 tablespoons cocoa powder
4 tablespoons honey
warm slightly to combine.

Line a mini-muffin pan with candy liners. 
I purchased mine from Walmart or Micheals.









Pour the chocolate into a condiment squeeze bottle (can also be purchased at Walmart).









Drizzle about a teaspoon of chocolate into each liner.









Place tray in freezer.  When chocolate is firm, it is time to add the peanut butter layer. Return tray to freezer.


When the peanut butter is firm, top with chocolate.  These maintain their shape best frozen.
Certainly a treat and a great way to increase Omega 3 intake!  Man clan approved.  Good news...this satiates the chocolate craving and one is enough. Deliciously satisfying.


To make almond joys or mounds, substitute peanut butter mixture for coconut.

1/2 cup shredded coconut
2 TBS coconut oil

Combine and chill slightly..   Place about a 1/2 tsp of coconut mixture on top of frozen chocolate.  Flatten and place a whole raw almond on top of the coconut.  Drizzle chocolate over filling. Place back in freezer.
