My Supper Co-op Chicken (New Recipe)

Ok, the co-op menu has me down for roasted chicken thighs.....I looked at that and thought, "BORING!!!!" Well, last night I googled for inspiration and I have found an impressive blog!!! This would be Luisa's pic of the recipe.

This recipe has unique flavors, not the everyday Southern fare. I have nothing against my dear adopted Southern cuisine. I have grown rather fond of it during my 20+ years in the South. There are times, however, that something just a little different seems essential. Often, when I am craving something different, Thai or Japanese flavors come to mind. I hope tomorrow supper does not disappoint! As I write, the chicken sits in the fridge soaking up the flavors of ginger, cumin, a touch of jalapeno, lemon....those I suppose would be the predominate flavors. I plan to serve it with jasmine rice and a fresh leafy salad topped with fresh ginger dressing. Don't worry my dear supper co-op partners...Next week's menu has be down for chicken alfredo. Humor me and let me try this exotic chicken dish on you.

Jelly Roll Demarle proven!

My dear friend, Sharla, has been making this recipe for many years. It is her husband's favorite! Well, she offered to make one for the most recent Demarle presentation held at her house. She borrowed my Flexipan. After making it using my product, she called me ecstatic! "Not only did it make the process so easy, but it made 2 jelly rolls!!!" At that moment, the FLEXIPAN was added to her wish list:-)


MEMA's Jelly Roll

5 eggs- separated
1/2 tsp. lemon rind
1 cup sugar
1 cup all purpose flour
2 TBS. lemon jc
1/4 tsp. salt

Combine egg yolks, sugar, rind, jc, and salt. Add flour. Beat egg whites until stiff; then fold them into the cake batter.

Spread half of the batter evenly in Flexipan. Bake 350 for 10-12 min Cool for about 5 minutes.
Sift conf. sugar on silpat and turn out cake onto conf. sugar. Spread jelly and roll! Wrap final product with silpat and chill. Repeat with remaining batter. PLEASE DO NOT USE A KNIFE ON YOUR SILPAT. Have you every used dental floss or thread for slicing? Try it, it works! Safe for silpats.

The Chocolate Chip Cookie Cake, Use for Flexipan!!!!




Giant Chocolate Chip Cookie

1 cup butter, softened
3/4 cup sugar
3/4 cup brn sugar
1/2 tsp vanilla
2 eggs


2 1/4 cups all-purpose flour
1 tsp salt
1 tsp baking soda
12 oz bag of chocolate chips

Combine wet ingredients with sugar. Combine dry ingredients. Gradually add the dry mixture to the creamed mixture, beating until well blended. Stir in chocolate chips.

Spread into Flexipan.......or get out some grease and spread into pan...If you are not blessed with any Demarle products, a foil round disposable pan works great for this as well. I have been told that pizza places are often willing to give a pizza box upon request...which is great if sending this to school for birthday celebration! I am partial to my DEMARLE?!?!?!? If you have never heard of Demarle...google it!!! I tell you what, "Once you try it, you will never go back>" Bake at 375 degrees F (190 degrees C) for 20-25 minutes. Cool cookie in pan on a cooling rack. Decorate as desired

Quiche Loraine

I served this at my latest Demarle demonstration. I have made versions of this twice since! Making it in the Demarle Tart Tray is the perfect size for putting on an english muffin! The recipe makes a full tray of 12 and still there is enough of the fixings to make a small quiche in the sunflower mold. Yet another option for cooking ahead and having a quick nutritious, high protein option for those busy school mornings! This recipe is found in my Down Home In High Style cookbook with artwork by Jack DeLoney. Thank you again, Mrs. Regina for that cookbook!

One thing I like about making quiche is that the recipe can be so versatile. Use what you have. I often substitute ham or sausage for the bacon. Cheddar or a mix of Mozzarella and Cheddar is most often what I have and use. Essentially, I use the recipe as a guide for quantities and proportions. In the second section of the recipe I have also substituted whole milk for the evaporated milk. 13 oz is 1 1/2 cup plus 2 TBS. At my January 2009 brunch presentation, I used chopped ham, shredded cheddar, and followed the remainder of the recipe.
Crustless Quiche Lorraine

10 slices of bacon, cooked and crumbled (1 cup of meat)
1/2 of 3 oz can of fried onion, crumbled
1 cup of shredded Swiss cheese


Combine these ingredients and using a small scoop evenly proportion the mixture into the tartlet tray.

(I use the small Pampered Chef scoop)

4 eggs, beaten
13 oz can of evaporated milk
salt and pepper to taste
1/8 tsp. cayenne pepper

Beat these ingredients together and pour from a liquid measuring cup into each tartlet.

Bake tartlets at 350 for 12-15 minutes. If baking in daisy mold, bake 20-25 minutes, or until egg is well set.


To make the Loaded English muffins:
  • Toast the English muffin.
  • Place a patty of cooked sausage on the English muffin.
  • Place the cooked tart sized egg on the muffin.
  • Lay a slice of American cheese over it all.
  • Top with other side of English muffin.
  • Set back under broiler until cheese is melted.
When I am making these for my husband or children as they are hurrying on their way....I have previously cooked the sausage and the egg so the only prep at the time of serving is the putting it together.

Apple Galette

Apple Galette

This is such an easy and versatile recipe. Make this on the Silpat as this recipe is created for or create Apple Tarlet's in the Flexipan Tartlet Tray. You can also substitute other fruits such as pears or peaches.

ingredients: 1 pie crust (9 inch)
3 baking apples, cored and sliced thin
4 Tablespoons sugar
2 Tablespoons flour
1 Tablespoon fresh lemon juice
1/2 teaspoon cinnamon
1 large egg white
1 Tablespoon half and half or whipping cream
1 Tablespoon unsalted butter, cut 1/2" thick

Ice cream (optional) Caramel Sauce or Dulce De Leche (Optional)
directions:Preheat to 400ºF. Place Silpat on a baking sheet or Demarle's Perforated Baking Sheet.

Combine the cut and cored apples with 3 Tbsp sugar, 1 Tbsp flour, lemon juice, and cinnamon in a large bowl and set aside.

On Roul'pat roll out the pie crust slightly and transfer onto Silpat. Spoon apple mixture in the middle of the pie crust leaving about 2 " from the sides. Gently fold and pinch the dough on top of the apples, creating your rustic galette.

For the topping, work the 1 tbsp of flour, 1 tbsp sugar and 1 tbsp of butter with your fingers or pastry cutter to make crumbs. Sprinkle topping over apples and drizzle with half and half or whipping cream.

Whisk egg white with 1 Tbsp of water and brush along the pie crust.

Bake until the crust is golden and filling bubbles, about 20 minutes. Serve warm or at room temperature. Make it extra special and accompany each piece of galette with a serving of vanilla ice cream and drizzle everything with caramel sauce or Dulce De Leche.
