Yummy Ginger Salad Dressing

I have had this recipe for several years. Not exactly sure of its origin (somewhere online), during that time I have made it my own. I love to make a larger quantity to keep some extra on hand. I love flavorful salad dressings!

Benihana Salad Dressing
1/2 cup onion
1/2 cup vegetable oil
1/4 cup rice wine vinegar
2 TBS water
2 TBS ginger root
2 TBS celery
2 TBS soy sauce
2 TBS mayonaise
1 TBS tomato paste (I substituted the fleshy part of 1 tomato. No seeds and no juice)
1 TBS honey
2 tsp. lemon juice (I used the juice of one lemon)
1 tsp. salt

I throw all the above ingredients into a blender (Vita Mix). Blend until fibrously smooth. For my salad mix, I used a pre-bagged Garden Salad. I chopped it a little finer and added finely chopped cabbage as well. You know the health benefits of cabbage are far better than iceberg lettuce...right?!?!? Really, I like the texture and crunch of the cabbage. If you ever dine at those Japenese steakhouses and you like the ginger dressing, this one is a keeper!!! I love it. It makes enough to keep some in the fridge for salads the following week!!!!
