Roasted Sweet Potatoes
3 Medium Sweet Potatoes, peeled, cut into potato wedges
2 TBS Olive Oil
1 tsp. pumpkin pie spice
1 TBS sugar or (2 packets of stevia, sugar substitute)
Toss with drizzled olive oil. After combining spice and sweetener option, sprinkle that over the sweet potatoes too. Bake @ 450 for 25-35 minute or until tender, turning mid way through baking time.
After baking to desired tenderness, take out of oven and sprinkle with an additional mixture of spice and sugar prior to serving. This step is optional. I did it on 2/3 of the sweet potatoes and left my husband's potatoes alone, as he needs no additional sweetness! We are all the sweet he desires!!!!
